Junmai | Crisp & Refreshing
Overview: Miho-san revived Hattanso rice, an extinct heirloom breed, by devoting over 10 years of her life to learning how to grow it and brew with it. Female brewery owner and Toji, Miho Imada, mills the rice for this sake less than most Junmais because she believes it results in the best expression of rice flavor, balance, and complexity.
Tasting Notes: Full flavor, earthy touches and great texture with a long, persistent finish.
Kawatsuru Olive
Junmai Ginjo | Fruity & Floral
Overview: Made with yeast extracted from the Sanuki olive native to the region, this hyperlocal sake showcases the best of Kagawa in a one-of-a-kind bottling. Known for its rice-driven style with elegant, rich texture, Kawatsuru pays respect to the crane that symbolizes longevity and good fortune.
Tasting Notes: Juicy notes of musk melon, white flowers and green pear with hints of starfruit, grass and salinity.
Shiokawa Cowboy Yamahai
Junmai Ginjo Genshu | Savory & Complex
Overview: This undiluted brew is fit for a cowboy – made in the ancient Yamahai style, loaded with umami, and pairs beautifully with meat. Although Shiokawa-san first attempted making yamahai 14 years ago as an experiment, the demand for his yamahais have increased to the point where yamahai is now the majority of his total sake production.
Tasting Notes: Aromas of vanilla, cocoa and hickory smoke with a smooth finish. There are creamy hints of sweet rice and nougat that pop on an acidity push.
